I made this last night and it was absolutely delicious! Bruce devoured it and took some of the leftovers to work today. Last night was my first time cooking with eggplant and I must say, I'm not sure why I was so apprehensive about it. This was an easy recipe, slicing the eggplant length-wise was the hardest part. Just a couple of things though. 1.) If you want yours to look like the picture, use your broiler at the very end. 2.) Like every other Real Simple recipe I've tried, this one was very conservative with salt. So, salt-to-taste. We will definitely be adding this recipe to our recipe box! Enjoy!
